Plant rennets hold an important position amongst various coagulants used in cheese technology. The selection of a suitable plant coagulant is important due to the increasing global demands of cheese alongside reduced supply of calf rennet. Thus, a literature synthesis is presented to investigate recent achievements on their functional properties and enzymatic role in cheese making. Efforts have also been done to compare certain rheological and sensory properties of final products, arising from some plant and animal based rennets. In fact, some coagulants such as actinidin or dubiumin produce cheeses with sensory qualities similar to those produced by animal rennet. Others, like ginger, cucumisin or hieronymain proteases contribute to develop very different textures and flavors, due to excessive proteolytic activity and production of bitter peptides. For milk-clotting enzymes with high non-specific action, several improvement strategies have been developed to produce cheeses with sensory properties close to those of animal rennet. For example, the mixture of coagulants (cardosins/chymosin), the selection of appropriate milk or its ultrafiltration, as well as the increase of salting time of cheese during ripening could be efficient ways to improve texture and reduce bitterness. Concerning cheeses with high yield loss, the whey could be used for a traditional production of whey cheese. To conclude, the selection of appropriate plant rennet with high MCA/PA ratio and the optimization of all coagulation parameters play a central role in manufacturing cheese with superior rheological and sensory properties. La présente contribution met en parallèle trois législations – les lois française de 1913, luxembourgeoise de 1927 et belge de 1931 – au moment de leur publication respective. La confrontation est effectuée quant à la forme de ces législations. Il s’agit de voir s’il y a ou non une certaine « identité des actes » – en quelque sorte savoir si leur aspect extérieur se ressemble ou non (intitulé, structure, etc.) (1er chapitre). La confrontation exercée d’un point de vue formel n’est jamais loin de la confrontation conceptuelle en ce que l’ « identité de formulation » – tant article par article que selon la place qu’occupent les articles dans l’acte ou les « lacunes » - laisse la possibilité, d’une part, d’évoquer la réutilisation de mécanismes juridiques antérieurs voire le comblement de lacunes par des législations ultérieures et, d’autre part, permet d’entrer dans la comparaison des concepts à l’aide des sources officielles et non-officielles. C’est ce que nous tenterons de voir dans une seconde partie, au travers de l’analyse historique des législations belge et luxembourgeoise, au regard de la législation française (2e chapitre). The Saint-Denis altarpiece has been widely admired, commented and studied for a long time. Its conservation in the church, even after a new main altar in baroque style was placed in the choir, is an indication of the importance this work had acquired throughout time. Its painted wings were especially appreciated and were attributed to Lambert Lombard, Liège’s most renowned Renaissance painter, as early as the beginning of the 18th century. But this attribution has been discussed passionately, especially since the 1970’s. At the centre of these debate, we find a document dated 1533, discovered in 1958, naming a “Lambertum pictorem” working for Saint-Denis collegiate church. But this mention needs to be reconsidered and contextualised. This publication aims to present the content of this document and to dissect its meaning in the context of the making of the altarpiece, to which it has been related since its discovery. A new transcription will be provided and new archival material will be unveiled in order to shed a new light on this document as well as to give new paths to reconstruct the processes at work in the making of the altarpiece.
