[en] Energy metabolism of skeletal muscles in cattle is characterized by several specificities, mostly related to particularities of the digestive physiology. Energy metabolism of muscles relies on preferential utilization of some nutrients, such as volatile fatty acids and ketone bodies on the one hand, and glucose on the other hand, the contribution of non-esterified long chain fatty acids being limited. As for other species, nutrients utilization is influenced by the nature of muscle fibers, leading to preferential metabolic pathways. Energy metabolism can be either more oxidative, oxido-glycolytic, or glycolytic. Close relationships are found between energy metabolism, chemical composition of muscle - more particularly its fat level - and organoleptic quality of meat. [fr] Le métabolisme énergétique des muscles squelettiques du bovin présente plusieurs spécificités, dues principalement aux particularités de sa physiologie digestive. Il repose sur l’utilisation préférentielle de certains substrats, acides gras volatils et corps cétoniques d’une part, glucose d’autre part, la contribution des acides gras à chaîne longue s’avérant être quant à elle relativement limitée. Comme chez les autres espèces, la nature des fibres musculaires influence le mode d’utilisation de ces substrats en favorisant certaines voies métaboliques. Le métabolisme énergétique peut ainsi être davantage oxydatif, ou oxydo-glycolytique, ou bien encore franchement glycolytique. D’étroites relations existent entre ce métabolisme énergétique, la composition chimique du muscle — plus particulièrement sa teneur en lipides — et la qualité sensorielle de la viande qui en résultera.
