Abstract :
[en] Submerged fermentation is used extensively for production of vinegar in industrial manner. One of the main technological gaps in this kind of fermentation is the lack of efficient and cost effective starter culture. So far, vinegar is one of the fermented beverages produced without selected starter cultures (SSC) inoculation. In this speech, the technical problems are discussed encountered during production of starter production.
