Maltodextrin is a mixture of saccharides with a molecular weight between polysaccharides and oligosaccharides with DE lower than 20. Maltodextrin is more soluble in water than native starches, also is cheaper in comparison with other major edible hydrocolloids. Maltodextrin is obtained by moderate enzymatic or acidic hydrolysis of starch. The hydrolysis of starch, catalyzed by amylases, is the most important commercial enzyme process. The hydrolyzed products are widely applied in food, paper and textile industries. Because of the increasing demand for these enzymes in various industries, there is enormous interest in developing enzymes with better properties, such as raw starch-degrading amylases suitable for industrial applications and their cost-effective production techniques. Sorghum (Sorghum bicolor) is a widely grown crop in Africa. Obtaining enzymes from sorghum requires a transformation. The objective of this study was application of sorghum amylase for maltodextrin. Sorghum seeds were supplied by the ISRA (Bambey, Senegal). Seeds were germinated in the laboratory at 30°C for 72 h and the sorghum malt was dried at 40°C for 48 h. Corn starch (from Roquette, France) hydrolysis was assayed in a bioreactor of 2 l at a temperature of 65°C gently stirred. Raw starch was slurried in water (30% w/v) and sorghum malt was introduced, chloride calcium was added, pH was adjusted to 6. Maltodextrin was characterized in term of the dextrose equivalent (DE) during the hydrolysis. The yield of hydrolysis was evaluated by soluble solids (° BRIX) at different hydrolysis time. Corn and wheat starches as well as wheat and cassava flours were hydrolyzed using sorghum malt at 65 °C for 6 hours. During these reactions, dextrose equivalent (DE) values were followed under 3 concentrations of sorghum malt and of calcium chloride. Wheat flour presented the highest DE values and cassava flour had the highest hydrolysis yield. Thus, different dextrins were produced in a pilot plant and were analyzed by HPSEC and HPAEC-PAD for their molecular weight distribution and oligosaccharides composition respectively. The results indicated that oligosaccharides with broad molecular weight distributions were present in the dextrins produced and that the proportion of maltose was very high. [less ▲]

The hydrolytic and thermal stability of random copolyesters of epsilon-caprolactone (epsilon-CL) and ca. 30 mol-% 2-oxepane-1,5-dione (OPD) have been investigated. Compared with poly(epsilon-caprolactone) (PCL) of a comparable molecular weight, the hydrolytic degradation of the copolyester is faster in a phosphate buffer (pH = 7.4) at 37°C as confirmed by the time dependence of water absorption, weight loss, melting temperature, and molecular weight. This difference is a result of the higher hydrophilicity imparted to the copolyester by the ketone of the OPD units. The thermal degradation has been studied by thermogravimetric analysis (TGA), (HNMR)-H-1 spectroscopy, and size exclusion chromatography (SEC). The activation energy of the thermal degradation under nitrogen has been found to be lower for the copolyesters than for PCL, which indicates that the OPD co-units have a deleterious effect on the thermal stability of PCL. The thermal degradation primarily occurs by pyrolysis of the ester functions. [less ▲]

The present advances in hydro-mechanical analysis of a clayey rock fracturing are presented at a department seminar. The damaged zone existing around galleries composing underground structures is studied through two aspects: rock-atmosphere interaction at gallery wall and rock fracturing modelling. More and more efforts are undertaken to restore rivers in a state close to their natural conditions in order to meet the Water Framework Directive requirement. This directive commits EU member states to achieve a good ecological status of all their water bodies. It became thus very important to develop river restoration such as fish passages, bank renaturation, natural bars or meanders. Another important component of river restoration schemes is the decommissioning of man-made structures. These interventions can have significant impact on the river hydrology, hydraulics and morphology, such as bed degradation or aggradation, bank failures. Predicting these impacts of restoration schemes on the river, especially for large scale projects, should rely on detailed numerical studies. To achieve this goal, we develop a methodology to analyse different scenarios of river restoration based on several criteria related to flow, sediment transport and environment. This method is applied to the case of a French alpine river in which five hydropower plants will be replaced by a unique underground hydropower plant on the same section of river. [less ▲]

In this review of protein folding we consider the noncovalent interactions existing between atoms or molecules at the molecular level. The electrostatic, Van der Waals, hydrogen bonding, and hydrophobic interactions are described and their contribution to protein conformation is discussed. The growing interest in the hydrophobic effect arises from its importance in the protein folding process, and a semiempirical simulation of the free energy of solvation is proposed. In most proteins, the different forces we describe contribute to the stability of the protein conformation in a complex way. However, in the case of the apolipoproteins and cytochrome C551, the energetic contributions are easily distinguished. For this reason, these proteins are used to illustrate the importance of the different energy fields. [less ▲]

We investigated the peptides N-acetyl-AWYIK-amide and N-acetyl-VWYIK-amide corresponding to single amino acid substitutions in LWYIK, a segment found in the gp41 protein of HIV and believed to play a role in sequestering this protein to a cholesterol-rich domain in the membrane. The effects of these peptides on the thermotropic phase transitions of 1-stearoyl-2-oleoylphosphatidylcholine (SOPC) and mixtures of SOPC and cholesterol were intermediate between that having the wild-type sequence (LWYIK) and another (IWYIK), the least active peptide previously studied. This correlated with results from studies of single mutations in the gp41 protein of HIV-1, in which L679 of the LWYIK segment is replaced with either A or V, measuring the capability of TZM-BL HeLa-based HIV-1 indicator cells to form syncytia. The peptides were also comparatively analyzed in silico. All together, the results suggest that the mode of interaction of this region of gp41 with the polar heads of membrane lipids contributes to its cholesterol selectivity and that this is somehow related to the biological activity of the viral glycoprotein. In 2006, the 17 percent of the world’s electricity that was generated from hydropower represented nearly 90 percent of renewable electricity generation worldwide; Hydropower is an important source of renewable energy and produces extremely small quantities of carbon dioxide. Between 1998 and 2008, renewable electricity production in the world rose from 2,794.9 to 3,762.6 TWh, i.e. an additional 967.6 TWh. As a final conclusion, despite hydropower’s high initial costs, its long-term overall costs tend to be low. The average cost of electricity production by hydropower is still very attractive for the moment. In the next future, hydropower will keep his position, in front of the other renewable sources of electricity, on the same level with biomass, better that wind power and much cheaper than solar energy. Modern Earth models are constrained by an inertia coefficient y*=J(2)/H approximate to 0.3308 which leads to a so-called 'hydrostatic' flattening f(hyd) approximate to 1/299.9. The latter is in rather large disagreement with the observed flattening f approximate to 1/298.3. We show that a more satisfactory value of the inertia coefficient for constraining a standard Earth model is y approximate to 0.332, consistent with a hydrostatic flattening of about 1/298.6. The change of the value of the inertia coefficient from about 0.331 to about 0.332 significantly alters the density structure of the core, notably the density jump at the inner core boundary. It brings, as a by-produce, the hydrostatic values of J(2) and H to better agreement with the observed values than is presently thought, and most probably leads for the Slichter mode to a period of much longer than 5.42 h, which is the value computed for PREM.
