Several oils and fats often used for the industrial preparation of European shortenings were blended in binary systems. The equilibrium (after 48 h at 15 degrees C) solid fat contents (SFC; determined by pulsed NMR spectroscopy) were measured and plotted against blend composition. SFC of the blends resulted from the SFC of each fat for the considered temperature as well as the type of interaction existing between those fats (namely, ideal behavior, monotectic interaction, eutectic interaction, and so on). The type of relationship fitted was dependent on the kind of interaction: Linear relationships were found for total compatibility between fats, and polynomial-type (order 2) relationships were found for fats exhibiting incompatibility. Some corresponding ternary oils and fats blends were also prepared and analyzed. Selected relationships (regression equations of the fitted curves) obtained for binary blends were combined in order to calculate the SFC of the corresponding ternary blends. Experimental values were generally close to predicted ones. The representation of SFC as a function of composition is interesting as it allows one to determine rapidly and easily the type of molecular interaction between two fats and also to determine equations that can be. combined to calculate easily the SFC of corresponding ternary blends crystallized in the same way with a good accuracy. The texture (hardness) of several binary and ternary blends was also measured. The combination of the results obtained for SFC with the results obtained for the hardness of binary blends allows the prediction of the hardness of a corresponding ternary blend under the same conditions. Fish oils are well-known sources of nutritionally valuable components such as the n-3 FA EPA and DHA as well as the fat-soluble vitamins A, D, and E. However, some fish oils can be contaminated with considerable amounts of dioxins and dioxin-like PCB. The most important challenge during fish oil refining is to remove these contaminants without altering the levels of nutritionally valuable compounds and the oxidative status and stability of the oil. Treatment with an apolar adsorbent, e.g., activated carbon (AC), seems to be the most efficient process today. Very little information about the adsorption of different dioxin and PCB congeners is available. Four grades of AC were evaluated for their efficiency in removing these compounds. In addition, the effects of the treatment on the nutritional and oxidative quality of the oil were evaluated. After treatment of contaminated cod liver oil [5.4 ppt toxic equivalents (TEQ) polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/F), 18.1 ppt TEQ dioxin-like PCB] with 0.5% AC, almost all PCDD/F and up to 80% of the dioxin-like PCB could be removed. AC showed low affinity for mono-ortho PCB (< 30% removal), which could be explained by their noncoplanar structure. Removal efficiencies were dependent on the grade and percentage of AC used. The treatment of contaminated cod liver oil caused no important effects on oil quality or FA composition in the conditions tested. [less ▲]

Deacidification in physical refining is one of the most sensitive steps in refining edible vegetable oils because of its large impact on the quality of the oil. The removal of volatile compounds such as FFA is accomplished at elevated temperatures and a high vacuum with a stripping gas, usually steam. The aim of this work was to verify, at the laboratory level, the advantages of using an alternative stripping gas, nitrogen, instead of steam. An ideal vapor-liquid equilibrium model (lVLE) was used to compare the stripping capacities of steam and nitrogen and to analyze the effects of various operational parameters (temperature, pressure, amount of stripping gas) on the residual acidity of the oil. There was no clear evidence that nitrogen showed a higher capacity to strip FFA than steam. The IVLE model seemed suitable to describe FFA laboratory distillation by using steam or nitrogen, provided the final residual content of FFA was not too low. [less ▲]

Two ternary systems of fats were studied. In the first system, low-erucic acid rapeseed oil (LERO), hydrogenated low-erucic acid rapeseed oil (HLERO), and palm oil (PO) were blended. In the second system, hydrogenated palm oil (HPO) was used instead of PO and was blended with LERO and HLERO. The blends were then studied for their physical properties such as solid fat content (SFC), melting curves by DSC, and polymorphism (X-ray). HPO showed the highest melting enthalpy after 48 h at 15degreesC (141 +/- 1 J/g), followed by HLERO (131 +/- 2 J/g), PO (110 +/- 2 J/g), and LERO (65 +/- 4 J/g). Binary phase behavior diagrams were constructed from the DSC and X-ray results. Iso-line diagrams of partial-melting enthalpies were constructed from the DSC results, and binary and ternary isosolid diagrams were constructed from the NMR results. The isosolid diagrams demonstrated formation of a eutectic along the binary blend of PO/HLERO. However, no eutectic effect was observed along the binary lines of HPO/HLERO, PO/LERO, HPO/LERO, or HLERO/LERO. The same results were found with the iso-line diagrams of partial-melting enthalpies. As expected, addition of PO or HPO increased polymorphic stability in the beta' form of the HLERO/LERO mixture. [less ▲]

Low-erucic acid rapeseed oil (LERO) and hydrogenated low-erucic acid rapeseed oil (HLERO) were blended in binary systems. The blends were then studied for their physical properties such as solid fat content, melting curves by DSC, textural properties, and polymorphism. Phase behavior diagrams were constructed from the DSC and X-ray results, and isosolid diagrams were constructed from the NMR results. The mixture of HLERO and LERO displayed a monotectic behavior for all the storage time at 15degreesC. The aim of this work was to evaluate physical characteristics of binary blends of HLERO and nonhydrogenated LERO in order to use only LERO and hardened LERO in bakery shortenings. The mixture of 60% HLERO and 40% LERO is suitable to use as a plastic shortening, This blend is beta tending upon storage at 15degreesC. It could be used in pie crust applications. [less ▲]

Foaming properties of surfactin were investigated and compared to those of sodium dodecyl sulfate (SDS) and bovine serum albumin (BSA). Foams were formed by a bubbling technique. Evolution of the foam volume and the liquid in the foam was monitored with optical and conductimetric methods to characterize foam formation and stability. Excellent foaming properties of surfactin were shown by its higher ability to form and stabilize the foam at a concentration as low as 0.05 mg/mL, in comparison with SDS and BSA. Surfactin produced a foam with intermediate maximum density and stabilized the liquid in foam, as well as BSA. [less ▲]
