Until now. the starch properties are rarely considered as a quality criterion. In this study, we showed the influence of wheat cultivars (Triticum aestivum L.) and culture year on the intrinsic properties of starch, extracted from European wheat grown in the same conditions. For example, starch damage varied from 13.2 to 19.9 CDU in function of the cultivars and contribution of the B-type starch granules (<10 mu m) to the total volume ranged from 11.6% to 29.9%. Starch viscosity at 95 degrees C, characterized with alpha-amylase inactivation by 2 mM AgNO3 addition. varied from 276.5 to 351.5 BU with the wheat cultivars. It is apparent from this study that starch properties were principally influenced by the wheat cultivar and slightly by the culture year. A good relationship between the pasting properties of whole flour and starch were finally established, showing the important role of starch in the whole flour viscosity. A thorough working knowledge of starch properties could lead to an appropriate selection of wheat cultivar, well-adapted to industrial end uses, without encountering processing or end-products quality problems and with most cost-competitive production. [more ▼] This study investigated the influence of some physic and chemical parameters of wheat grains on the performances of broilers (Ross). Four varieties (Agami, Corvus, Folio et Meunier) were grown on a single site in harvest year 2003. This cultivar samples are ground and included in starter (57.6 % of wheat) and growth diets (61.4 % of wheat). Broiler’s intake was not influenced (p > 0.05, n = 24) by varieties. But weights of chicken (38 days) were (p < 0.05, n = 516) higher with Folio and Meunier. Feed conversion ratios cumulated between day 3 to day 38 (FCR) were (p < 0.05, n = 24) lower with Folio and Meunier than with Corvus and Agami. Hardness was negatively correlated with FCR (r = - 0.60, p < 0.01, n = 4). The correlation between crude proteins and FCR was equal to - 0.70 (p < 0.001, n = 4). FCR was negatively correlated to Zeleny’s index (r = - 0.62, p < 0.01, n = 4), wet (r = - 0.66, p < 0.001, n = 4) and dry gluten (r = - 0.51, p < 0.05, n = 4). FCR was negatively correlated to ratio of large (> 1800 μm) particles in ground wheat (r = - 0.48, p < 0.05, n = 4) and also related to small (< 707 μm) material (r = 0.53, p < 0.01, n = 4). Surprisingly, FCR was negatively correlated with amounts of soluble Non-Starch Polysaccharides and soluble Arabinoxylans. The same pathway was observed with in vitro viscosity data. Intestinal viscosities were not related (p > 0.05, n = 24) to broiler’s performances.
