This study aims at analyzing the development processes of rice vermicelli in Dinh Ke and Thu Duong villages of Bac Giang province. The authors conducted a survey with 66 households involving rice vermicelli production and 51 households who did not involve. In combination with in-depth interviews with representative leaders of "Cooperative of production and trading of rice vermicelli in Dinh Ke" and "Association of production and consumption of Chu vermicelli in Luc Ngan district", the data indicated that not only did the development of traditional craft villages bring high income for farm households but they also helped to conserve Vietnam cuisine culture. In order to develop traditional craft villages, it is necessary to re-establish linkages from a production stage to marketing of products, to ensure adequate facilities for drying products, and to impose strong sanction to deal with illegal trading. The study was conducted in two famous traditional rice noodle production handicraft villages in Bac Giang province: Dinh Ke commune (Ke rice noodle production) and Thu Duong com- mune (Chu rice noodle production). The survey was carried out with 196 households, of which 118 involved directly in the value chain including rice traders, 30 noodle consumer households, and 46 are income control households. ln addition, the study gathered information and data through group discussions and consultation with local authorities who were involved in rice noodle production in the villages. The results indicated that the value chain of noodle created a high added value (approximately 19 million VND per ton of products) and among value chain actors, rice noodle processors gained more profit that encouraged these actors to increase investment into production and selling of noodle products. The recommendations include improving product quality, reducing environmental pollution, dealing with issues such as gen- der inequality in terms of income, and strengthening information sharing among actors of the value chain. Located in the Red River Delta region, Hung Yen province has 923000 ha of total land area, of which agricultural land area occupied 60.67%. The agricultural land area per labor is 0.1 ha. However, it has been annually decreasing due to the development of industrial zone, construction of urban zone, expansion of road… For these reasons, the stainable development for production and processing of agricultural products plays a very important role in job creation for farmers who loosed their own agricultural land, avoidance of quantity and quality loosing of raw agricultural products and increase in economic efficiency of agricultural production and processing. The production and processing of canna are traditional jobs of rural households in Hung Yen. They not only have been creating jobs for rural households but also increasing in their income. Beside the social and economic benefit created by these activities, the processing activity has caused many negative consequences. It led to environmental pollution due to its waste, overuse of chemical substances. Desiccated of vermicelli in bad condition resulted in the unsafe food. Therefore, this study is conducted to deeply investigate both positive effects and negative consequences created by production and processing of canna vermicelli in term of economic, social and environmental aspects. This study concentrates on the farm households; discuss advantages and disadvantages of production inputs, processing techniques and output market of their products from arrowroot to vermicelli; and find out solutions for the sustainable development for production and processing of vermicelli.
