The impact of the extraction conditions has been studied on the yield, chemical composition, rheological and textural properties of ulvan from the green seaweed Ulva lactuca. High ulvan yield was obtained after combining enzymatic and chemical extraction but the lowest yield results at the drastic conditions (pH 1.5 and 90 C). Besides, solvent acidity was an important parameter controlling the ulvan extraction efficiency. The different extraction processes affected chemical composition of ulvan extracts and in particular, sulphate, ash and sugar contents. Low proportions of galactose, glucose and protein were also found in sulphated polysaccharides. The extract, which is resulted from combined enzymatic and chemical extraction, was mainly composed of high peak molecular weight polysaccharides. Ulvan hy-drocolloids demonstrated a pseudoplastic behavior. Viscoelastic behavior was carried out at a concen-tration of 1.6% (w/v) in the presence of 7 mM sodium tetraborate and at pH 7.5. However, polysaccharides formed a gel. It was not the case for the extract at pH 1.5 and 90 C under the same conditions. The results showed that a significant effect of the conditions of extraction on the textural characteristic (firmness, springiness and adhesiveness) of ulvan gels. [less ▲]

Cassava (Manihot esculenta Crantz) is a starchy staple food that previous researches have showed to contain cyanogenic compounds, precursors of hydrocyanic acid, undoubtedly toxic for humans. With the aim to determine food security in cassava, this study developed a simple, fast and less expensive step for quantifying cyanide ions by using micro-diffusion with modified Conway cells. After an enzymatic degradation, the cyanide ions were quantified by electrochemical procedures. The validation of this method is estimated. The concentration of cyanide ions at different part of the samples was determined. The results showed high toxicity in some fresh Senegalese consumed cassava varieties (>100 mg HCN·kg﹣1). However, in the processed cassava products, less than 10 mg HCN·kg﹣1 was found in the different varieties studied except for the chips where the levels of CN﹣ contents were important (>49 mg HCN·kg﹣1). This study describes a glucocapparin determination method. Based on rapeseed determination of glucosinolate (GSL), the equation of the average straight regression line is Y = 100.42X − 0.03 (R2 = 0.9998). Enzymatic hydrolysis of glucocapparin extracted from leaves and fruits of B. senegalensis, analyzed by SPME-GC-MS confirmed the presence of methylisothiocyanate as the main hydrolysis glucocapparin product. Monitoring glucocapparin contents in B. senegalensis leaves and fruits collected in 4 localities in Senegal showed differences between organs according localities and periods of harvest. Glucocapparin content was very high in dry season particularly in January and the lowest rates were recorded during the rainy period between August and November. [less ▲]

Cassava is one of the main plants and starchy roots grown in the world. In 2008, the total yield of cassava in West Africa represented 29% of the world production. However, in many West African countries such as Senegal, cassava is not used as a staple food. In fact, the processing techniques used for cassava are poorly known. In addition, the chemical composition of local cassava varieties has not yet been determined, nor has their toxicity been assessed. In 2004, showing an aggressive agricultural policy and revived interest, the Senegalese government launched a major program for intensifying the production of cassava for food security purposes. Cassava is an important source of calories and can be an interesting option for imported rice and wheat. Although many food products made from cassava are well known in the region, their use in the Senegalese diet is rare. Nevertheless, these cassava products are found as delicacies in some restaurants, and are consumed by the Senegalese and many other Africans. The objective of the present study is to demonstrate the nutritional value and the dietary possibilities of using cassava as a staple food in Senegal. [less ▲]

Kashin-Beck disease (KBD) is an endemic and chronic osteochondropathy. This disease principally occurs in the Tibet Autonomous Region and in several provinces of the People’s Republic of China. The etiology of the disease remains obscure although environmental factors are assumed to be involved. Diet, in particular, differentiates the rural community, affected by KBD, from the other communities (nomads and city-dwellers), who remain unaffected. In anticipation of a nutrition survey, this study aimed to measure the mineral content (Ca, P, Mg, Fe, Zn, Mn, Cu, Ni, Se, Al, Sr, Mo, Cd, As, Pb, Hg, Cr, and Co) of eight Tibetan staple foods and to compare the results against two food composition tables (FCTs). Foods were sampled in twenty households selected from both an endemic and a non-endemic area of rural Tibet. Ten minerals involved in bone metabolism were measured using atomic and molecular spectrometric methods. Results revealed that a very limited number of food/constituent pairs showed a variation in mineral composition during a single year of testing for a given region. In addition, results showed significant differences in mineral content between the endemic and the non-endemic area, especially for wheat flour. Following our analysis of the mineral content of the Tibetan food samples, results were statistically compared with similar foods listed in two food composition tables: the USDA National Nutrient Database (USDA Food Search for Windows, Version 1.0, database version SR23), and the China Food Composition Table (book 1, 2nd edition). More than 50 to 60% of p-values < 0.05 were highlighted, suggesting the inappropriateness of using FCTs as a reference for nutrition surveys in rural Tibet, and emphasizing the need for analysis of traditional foods. Differences were found to be more or less marked depending on the element considered, and calcium content seemed to show the greatest difference. Although it is obviously too early for definite conclusions to be reached (insufficient number of samples by food and insufficient number of foods analyzed), it seems that the present pilot-study indicates significant discrepancies between measured and tabulated values of the mineral content of certain foods. A more complete survey would therefore seem mandatory. [less ▲]

Dans le sillage du projet « Contrôle du ruissellement et de ses impacts en culture de pomme de terre en Région wallonne 2009-2010 », un essai a été mis en place à Huldenberg sur demande de l’entreprise Bayer CropScience et financé par celle-ci. Pour rappel, le cloisonnement des interbuttes est la mise en place de diguettes entre les buttes de pomme de terre afin de favoriser l’infiltration de l’eau plutôt que son ruissellement. Les résultats de cette nouvelle année d’essai confirment l’efficacité de cette technique quant à la réduction du ruissellement et de l’érosion ainsi qu’une tendance à la hausse des rendements en tubercules. Multiple strains of Bacillus subtilis were demonstrated to stimulate plant defense responses, and cyclic lipopeptides may be involved in the elicitation of this induced systemic resistance phenomenon. Here, we further investigated molecular events underlying the interaction between wuch lipopeptides and plant cells. Addition of surfactin but not fengycin or iturin in the micromolar range to tobacco cell suspensions induced defense-related early events such as extracellular medium alkalinization coupled with ion fluxes and reactive oxygen species production. Surfactin also stimulated the defense enzymes phenylalanine ammonia lyase and lipoxygenase and modified the pattern of phenolics produced by the elicited cells. The occurence of these surfactin-elicited early events is closely related to Ca2+ influx and dynamic changes in protein phosphorylation but is not associed with any marked phytotoxicity or adverse effect on the integrity and growth potential of the treated tobacco cells.
