A l’heure où l’Union européenne prépare un texte qui pourrait rendre l’étiquetage nutritionnel obligatoire d’ici 2014, le présent article réalise un tour d’horizon des législations et pratiques en vigueur au sein de l’Union européenne en matière d’étiquetage nutritionnel. Les différents systèmes de représentation ainsi que les différents types de valeurs de référence sont présentés et discutés. La liste des avantages et inconvénients de chaque option possible sert de base à une réflexion sur les limites des pratiques actuelles et permet de proposer quelques pistes d’amélioration. Les différentes informations présentées visent à la fois à aider à une meilleure compréhension de l’étiquetage nutritionnel par le public non averti, mais aussi à permettre aux professionnels du secteur de poser leurs choix de manière éclairée. Agar contact microbiological sampling techniques, based on a transfer of the microorganisms present on a surface to a culture medium, are widely used to assess and control surface cleanliness and to evaluate microbial contamination levels. The effectiveness of these techniques depends on many environmental parameters that influence the strength of attachment of the bacteria to the surface. In the present study, stainless steel and high density polyethylene surfaces were inoculated with known concentrations of Staphylococcus epidermidis. Following an experimental design, the surfaces were sampled with different types of replicate organism direct agar contact plates and Petrifilm; results indicated that recovery rates were influenced by the presence of egg white albumin or Tween 80 in the inoculum solutions or by the introduction of surfactants into the contact agar of the microbiological sampling techniques. The techniques yielded significantly different results, depending on sampling conditions, underlining the need for a standardization of laboratory experiments to allow relevant comparisons of such techniques. For several years now, the Walloon Region has been supporting a project to help and follow farmers through their diversification activities: la Cellule Qualité Produits Fermiers (CQPF). Among their partners, the Process and Quality Engineering Laboratory in the Department of Food Technology of the Agricultural University of Gembloux is in charge of the hygienic supervision, ensuring the implementation of self-evaluation systems based on the HACCP principles and good hygiene practice guidelines. For four years, the CQPF has been following almost a hundred Walloon cheesemaking artisans using raw milk from cow, goat and ewe. According to the Commission Regulation (EC) No 2073/2005 on microbiological criteria for foodstuffs, analyses of microbiological pathogens have to be performed regularly to guarantee healthy and hazard free raw milk products. The results of microbiological analyses from raw milk cheeses of our artisans between January 2007 and June 2010 are presented below. We were interested on showing firstly, if the quality of the Walloon cheeses follow the standards of food safety criteria established by the European regulation, and secondly, if there is a trend for pathogen contamination throughout the year. Milk coagulation has a direct effect on cheese yield. Several factors influence the milk coagulation kinetics. In addition to calcium and milk protein concentrations, titratable acidity influences all the phases of milk coagulation. The objective of this research was to study the feasibility of prediction of titratable acidity directly in bovine milk using mid-infrared spectrometry. In order to maximize the variability in the measurements of titratable acidity, milk samples were collected on basis of several criteria (e.g. breeds). The titratable acidity was recorded as Dornic degree. All samples were also analyzed by MIR spectrometry. Using partial least squares regressions and first derivative pretreatment of spectral data, a calibration equation was built to predict the Dornic degree in cow milk. First results were promising and showed the potentiality to this calibration. The calibration and cross-validation coefficients of determination were 92.25 and 89.88 %, respectively. Moreover, the ratio of standard error of prediction to standard deviation was 3.13 and permits us to consider the calibration equation as usable in most application such as scientific researches and the screening of the Walloon dairy herd particularly in order to improve the milk coagulation properties. This manuscript compares the modifications induced by the heat-moisture treatment of native starch (HMT) and by the hot-air drying of corn on wet-milled starch granules. High temperatures applied during both corn drying and HMT reduced the swelling capacity of granules, increased the starch gelatinization temperatures and decreased their residual enthalpy. Pasting behaviour of pre-treated starch showed a decrease of peak and breakdown viscosity when corn drying and HMT temperatures increased. Microscopic analysis showed that after hydrothermal treatment, starch granules extracted from corn dried at lower temperature swell more significantly than those extracted from corn dried at higher temperature. All these changes suggest the occurring of structural modifications within starch granules during high-temperature pre-treatments. At similar temperatures and initial moisture contents, HMT affected the physicochemical and functional properties of cornstarch more dramatically than hot-air drying. Differences induced by these two treatments were attributed to the availability of water around granules during these two pre-treatment procedures. [less ▲]

In this context, Agricultural University of Gembloux, Department of Food Technology and “Centre d’Expertise pour la Qualité” have ensured and are ensuring autocontrol system implementation based on the HACCP principles, together with the application of good hygiene practice. In the present work, a radial-flow cell was used to study the removal of starch particle aggregates from several solid substrates (glass, stainless steel, polystyrene and PTFE) in order to determine the critical wall shear stress value for each case. The particle aggregates were formed by aspersion of a water or ethanol suspension of starch granules on the surfaces. Depending on the substrate and on the suspending liquid, the aggregates differed in size and shape. Aggregate removal was studied at two flow rates. At the lower flow rate (Re-inlet = 955), the values of critical wall shear stress for the different surfaces suggested that capillary forces were, for all of them, playing an important role in aggregate adhesion since aqueous based aggregates were always more difficult to remove. At the higher flow rate (Re-inlet = 2016) the critical wall shear stress increased as a result of the change in the flow pattern in the vicinity of the aggregates and not because of changes in the type of particle adhesion. This raises the importance of the experimental conditions on assessing the critical wall shear stress since this parameter may not be always only directly related to the soil adhesion strength. Pure starches were isolated from white and red sorghum cultivated in Tidikelt, a hyper and region situated in south Algeria. Amylose content, X-ray pattern and theological properties of starches were examined. The amylose content in white sorghum starch (27.1%) was slightly higher than that in red sorghum (24.8%). The swelling power and the solubility behavior of both starches were nearly similar below 65 degrees C. At higher temperatures, starch isolated from the white sorghum cultivar showed higher swelling power and lower solubility index than pigmented sorghum starch. The pasting properties of starches determined by RVA, Rapid Visco Analyser showed different viscosity peaks. Red sorghum starch had a higher value (4731 cP) than white sorghum starch (4093 cP). For both sorghum, X-ray diffractograms exhibit an A-type diffraction pattern, typical of cereal starches and the relative degrees of crystallinity were estimated at 22.72% and 28.91%, respectively, for local white and red sorghum starch. DSC analysis revealed that sorghum starches present higher temperatures at the peak (70.60 and 72.28 degrees C for white and red sorghum starches, respectively) and lower gelatinization enthalpies (9.087 and 8.270 J/g for white and red sorghum starches, respectively) than other cereal starches. The results showed that physicochemical and functional properties of sorghum cultivar starches were influenced by the genotype and the environment. (C) 2009 Elsevier Ltd. All rights reserved. The effects of air drying temperature on the wet-milling performance and the proteins solubility indexes were investigated for corn kernels dried between 54°C and 130°C. It was observed that when the drying temperature increases, the starch yield drops significantly. The gluten recovered increased abruptly for drying temperatures up to 80 C. The albumin, globulin and zein solubility indexes decreased continuously when corn drying temperatures increased. According to the temperatures used, the starch yield, the gluten recovered and the salt-soluble proteins solubility indexes were adjusted satisfactorily by using a two asymptotic logistic model. This model has the advantage of supplying information on the dynamic of the variation of described parameters. The solubility index of total salt-soluble proteins was shown to be a suitable indicator of the severity of the drying treatment in regard to the corn wet-milling performance. [less ▲]

Studies on the effect of wall shear stress on soil and biofilm attachment and removal from a surface are one of the many applications of radial axisymmetrical flow. The particular nature of this flow allows taking advantage of a wide range of wall shear Stress applied at the analyzed surface in a single experiment. This type of experiments provides a critical radius up to which soil removal occurs. Good models are, however, still needed to convert the experimental data into critical wall shear stress. Analytical models are already available for creeping flow but Computational Fluid Dynamics must be applied for experiments performed at higher Reynolds numbers. The present study is a numerical analysis of the radial axisymmetrical flow for aspect ratios of 0.125, 0.25, 0.5 and 1 with inlet pipe Reynolds numbers varying from 0 to 2000, aiming at computing the wall shear stress distribution at any distance from the center. The simulations provided a thorough description of the complex flow pattern encountered close to the inlet section, which were validated for the laminar regime by dye injection. A total of up to four recirculation zones were identified in both numerical and experimental investigations. The experimental positions of these recirculation zones corresponded well to the numerical predictions. Based on this work, a map of the flow for the different aspect ratios was developed, which can be particularly interesting for the design of experimental devices involving axisymmetrical flow.
